Add the beef stock and red wine and cook until the liquid is reduced by half about 20 minutes. I used 8 short ribs not frozen mixed some brown sugar in with the salt pepper I rubbed on the ribs. Basically I used 5 c Reunite Lambrusco a sweeter red and after sauteeing shallots in butter I added the wine and simmered for a looong time so it reduced by about 12 then added butter x3 later added about the same amount of broth by then the stuffed loin was ready to be moved to a platter and added a little cornstarchcold water.
But the leftovers keep well in the fridge for several days and make great lunches. This recipe serves a crowd at 12 servings. And if you are cooking for a larger crowdgo ahead and double the recipe.
